Seed to Spirit
From Dominican organic cacao to your chocolate experience.

Since 2011, we have been growing organic cacao in harmony with the Dominican rainforest. Every tree was planted without clear-cutting, chemicals, or industrial farming methods. Following regenerative agriculture principles, cacao grows alongside avocado, guanábana, noni, and other tropical species, creating a diverse ecosystem that naturally enriches the soil over time. More than a plantation, it is a living forest that continues to thrive with every season.

Most chocolate is produced using high-temperature roasting, a process that dramatically changes the natural composition of cacao. At Elvereon, we take a different path.
Unlike most chocolate, our raw cacao chocolate begins with cacao beans that are never roasted. Throughout fermentation and chocolate making, we carefully control temperatures to preserve cacao as close to its natural state as possible. This gentle approach helps preserve the bean's original character, complex flavor profile, and many of the naturally occurring compounds that make cacao so remarkable.
This is why we call it Live Chocolate.
Further below, we explore some of the naturally occurring compounds that make cacao one of the world's most remarkable fruits.

Elvereon is more than a place. It is the spirit of a hidden corner of the Dominican mountains, where tropical forests, mountain rivers, and cacao trees thrive in natural harmony.
Elvereon is the name of the place we call home — a landscape of silence, nature, and freedom. Here in Jamao al Norte, Dominican Republic, surrounded by rainforest and nourished by fertile soils, we began planting cacao in 2011, following principles of respect for the land and natural ecosystems.
Every harvest carries a part of this place within it. More than chocolate, Elvereon is an invitation to experience the character, beauty, and living energy of its Dominican origin.

For thousands of years, cacao has been valued not only for its flavor but also for its remarkable natural composition.
Raw cacao naturally contains minerals such as magnesium and potassium, as well as unique compounds including theobromine, phenylethylamine, and anandamide. These naturally occurring substances have attracted scientific interest for decades because of their association with energy, mood, and overall well-being.
At Elvereon, our gentle low-temperature process is designed to preserve cacao as close to its natural state as possible, allowing you to experience the richness, complexity, and character of the fruit in a way that conventional chocolate rarely offers.

ANANDAMIDE
Often called the “bliss molecule,” anandamide is a naturally occurring compound found in cacao. Its name comes from the Sanskrit word ananda, meaning joy, bliss, and inner happiness.
PHENYLETHYLAMINE
Often referred to as the “love molecule,” phenylethylamine is associated with feelings of excitement, motivation, focus, and emotional connection.
THEOBROMINE
Theobromine is cacao’s signature natural stimulant. Unlike caffeine, it provides a smoother and more balanced sense of energy without the sharp peaks and crashes often associated with coffee.
FLAVONOIDS
Flavonoids are powerful natural antioxidants found in cacao. They have been widely studied for their role in protecting cells and supporting overall well-being.
At Elvereon, we believe cacao is more than a flavor.
By preserving its natural character, we aim to preserve what makes cacao truly remarkable in every chocolate experience.
We welcome visitors to our cacao plantations and chocolate workshop.
