Organic Cacao in the Dominican Republic

 Since 2011, we have been growing cacao in harmony with the Dominican rainforest.

From the beginning, our goal was never to create a conventional plantation. Instead, we planted cacao directly within a living ecosystem, following the regenerative agriculture principles of Austrian agroecologist Sepp Holzer.

Our cacao trees grow alongside avocado, guanábana, noni, citrus, and many other tropical species. Together they create a diverse forest that naturally supports soil fertility, biodiversity, and long-term resilience.

More than a plantation, it is a self-sustaining ecosystem that grows stronger with every season.

Criollo, Forastero and Trinitario cacao varieties

Trinitario — The Best of Two Worlds

 

Our plantations are planted with a rare Trinitario cacao variety.

Trinitario combines the extraordinary flavor complexity of Criollo cacao with the strength and disease resistance of Forastero. For generations, it has been considered one of the finest cacao varieties in the world because it brings together exceptional taste and natural resilience.

This unique genetic heritage forms the foundation of every Elvereon chocolate bar.

Zero-waste cacao production and regenerative farming

Nothing Is Wasted

 

Nature does not create waste, and neither do we.

After processing, cacao husks, pulp, and other organic materials are returned to the land. Over time they naturally decompose and become nutrient-rich organic fertilizer.

This closed-loop approach continuously replenishes the soil and allows the plantation to remain productive without relying on intensive external inputs.

Every harvest helps nourish the next.

For thousands of years, cacao has been treasured by civilizations not only for its flavor but also for its remarkable natural composition.

Its fruit contains minerals, antioxidants, and unique naturally occurring compounds that have fascinated researchers for decades. Many of these delicate substances are highly sensitive to heat, which is one of the reasons we later developed our Live Chocolate philosophy.
